As I recall This took me quite a few attempts
Obviously aftyer you beat them they got easyer but still what did you find tough

Hardest boss in any of the first three MK games would have to be Kintaro for me:
For some reason on the home versions of the game, he was made alot more difficult. He's quite easy on the version I downloaded on my PS3, but try the snes version, he's rock.
I can't really remember any specific bosses, but Fantasia on the megadrive was hard as fuck, you'd think a disney game would be really easy, but you only get 3 little health parts if i remember right and you have to time everything perfectly. never completed it :\

M.Bison - Street Fighter 2
FF7 - Jenova Birth on the Shinra Cargo ship took me a few attempts. So did Gi Nakkata.
Lost Odyssey - Bogimoray at Grand Staff took me a while to beat. Pissed me off real bad.

the assassination of Imran Zakahev, is pretty hard on Expert...

The final boss on assasins creed was a pain aswell now i think of it didnt take 2 long to do but was annoying.
